Spicy Tiger Prawn Spaghetti

(Serves 2)

  • Spaghetti for 2 persons

  • 8 Tiger Prawns

  • 1-2 tsp creole seasoning (spice mix with onion, garlic powder, oregano, basil, thyme, black and cayenne pepper, paprika, salt)

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 2 tomatoes, finely chopped

  • 2 tsp thyme

  • 1 tsp smoked paprika

  • ½ tsp chili or cayenne pepper (optional)

  • 1 cup vegetable broth

  • ½- 1 medium sized lemon, juiced

  • Salt, pepper

  • microgreens, for garnish

  1. Boil the spaghetti following package instructions. Drain and set aside.

  2. Sprinkle the prawns with the spices.

  3. Add the olive oil to a pan and place over medium heat until hot.

  4. Sauté the prawns for 3-4 minutes or until they turn pink. Set aside.

  5. Add 1-2 tbsp butter to the pan, then add the onion, garlic, tomatoes, thyme, smoked paprika, and chilli.

  6. Cook for 3-4 minutes stirring occasionally. Add the vegetable broth and lemon juice, and cook for another minute. Season with salt and pepper and add the spaghetti and prawns.

  7. Stir carefully until evenly mixed and add salt and pepper to taste.

  8. Turn the heat off, and let the dish sit for a while to soak in the sauce.

  9. Garnish with cherry tomatoes and microgreens. Serve hot.
